Oh Glorious Mexican Food
Last night was a glorious night. I finally took advantage of the black beans and tortillas that Kate brought me.
Enchiladas were on the menu, along with a gorgeous chicken/whole black bean/vegetable salad made by Megan.
My oven blew out halfway through the proceedings, but that didn't stop my from finishing the preparations.
Dessert was Arroz con Leche (spelling?), a rice/milk/sugar/cinnamon concoction.
It all turned out great, and the guest of honour, Alia, was thrilled.
