The first batch was accidently made with 5 Spice Powder. Luckily there was not a lot of sugar added so they are an interesting savory bun.

This batch is from a soft yeast dough, rolled thin, then covered in a mixture of brown sugar, butter and lots of cinnamon. Then the dough is rolled up and cut and baked.

Yum, its hours later and the house still smells good.

The secret is mashed potatoes, if i'm not mistaken.

Haha..5 spice powder. Almost like when I put baking soda in the butter tart muffins instead of baking powder.

If one does not have a microwave, then mashed potatoes are important for keeping them moist. However immediately after cooling we put them in the freezer and take out individual buns and zap them when we want to eat one. So they do not go stale and hence no need for mashed potatoes.

The secret is a soft dough that has not been kneaded very much. Also, right after they are cut they go onto a baking sheet (using parchment paper) and are baked immediately. No second rising. Seems to result in a denser bun, which also won't dry out as quickly.

I am glad you enjoyed the 5 spice powder story. Too bad you aren't here to help eat them.
